iExplorer (formerly iPhone Explorer) is a free app which allows you to:

retrieve photos easily from your iPhone/ iPad / iPod Touch
use the iPhone (etc) like an external flash drive
browse files and folders on it
delete sensitive items before giving the phone away

Just download the app to a computer, then plug in the device. This program even works on Windows as well as Mac!
